SOPI mobile pizzeria is owned and run by Lucas Fielding. Having learnt his craft within a variety of different kitchens, Lucas has over 12 years of culinary experience and was a finalist of the Young Sussex Chef of the Year in 2019. As his passion for pizza developed, he trained with world renowned dough expert Ralph Carlone of Pizza Per Passione in Scotland as well as running local pizza kitchens in Sussex. Owning a mobile pizzeria has long been a dream of his, so when the opportunity came it seemed only right that Lucas became the new owner of SOPI.

SOPI mobile pizzeria serves delicious wood-fired pizza in various locations around Haywards Heath throughout the week.

MADE BY HAND

SOPI pizza dough is made using a blend of Italian flours and is slowly fermented to create a delicious base with a light and crispy crust. We keep the toppings simple, honouring the classics, our sauce is made with the best San Marzano tomatoes and we use a combination of the freshest high-quality, authentic Italian and local ingredients. 

NEAPOLITAN

SOPI pizzas are hand shaped and stretched to12 inches before being cooked in our specialist wood-fired oven at 450°C. Giving the pizza their distinctive charring and light texture. Stretching the dough is a skilful process; it’s this technique that’s responsible for the aerated crust that sets Neapolitan pizza apart.

MOBILE PIZZERIA

SOPI is a mobile pizzeria serving freshly made, delicious, wood-fired Neapolitan pizza. We operate weekly in and around East & West Sussex and surrounding areas: West Hoathly, Sharpthorne, Lindfield, Haywards Heath, and at various destinations throughout the week.
